Weekly Meal Prep

Hello friends! 

The way my semesters at school works is called a 7-1-7 semester (but because fo the college strike it switched to a 6-1-6 semester). So this means I would have 7 weeks of classes, 1 week off for reading week, and 7 weeks of student placement. Currently I am in the weeks of student placement so that means I am in more of a set routine to get there in time early in the morning four days a week. I am not a morning person. I find that having everything ready for the morning makes it easier to wake up and get out the door faster. Every night I make sure I have my breakfast and lunch prepped, and picking out what Im wearing the next day. 

I start my meal prepping by browsing Pinterest, making a grocery list, making sure its simple and cheap as possible as I am a broke student. Most of the items I picked up were actually on sale so that was a huge score. After I get home with the groceries I prep what I can and put everything where it needs to go.

Breakfast List: 

  • Lactose free greek yogurt 
  • Cashew milk 
  • Strawberries 
  • Mangos 
  • Spinach 
  • Oatmeal 
  • Bananas 

Lunch List: 

  • Ciabatta buns 
  • Spinach 
  • Mozarella cheese 
  • Tomato 
  • Balsamic dressing (I picked up fig balsamic, its amazing) 
  • Apples 
  • Granola bars 

For this week I prepped a big thing of strawberries, mangos, and spinach for a breakfast smoothie for the days I was still running late, and for oatmeal for the days I woke up on time to eat with my morning tea. For lunch I chose to make calabrese sandwiches, with an apple and granola bar for snacks along with my bottle of water. 

These meals were great for me as they were super easy to make (I hate cooking), filled me up (Im constantly moving at co-op and needed something to fuel me), and was relatively cheap. 

Meal prepping has saved my mornings, and its something I don’t hate doing. What do you like to meal prep?
